With football season around the corner, you may be interested in Riunite’s Ultimate Chili Challenge, a nationwide chili cook-off culminating in a Grand Prize trip to the Super Bowl next year. Home cooks around the country are spicing up their recipes and popping open bottles to compete for the best chili creation and Lambrusco pairing.
To help me become a part of the Riunite Ultimate Chili Challenge, I was sent a few things to get my chili cooking started:But more importantly these two things!
Because really how could one not be inspired with a chef’s hat with your own name embroidered on it and a bottle of Lambrusco?!
I have to honestly say, chili is not something I make a lot of, so this recipe challenge, well it was challenging for me! But I mixed and matched from some online recipes I found and think I came up with something that is tailgate worthy 🙂 <– I’m pretty sure that had more to do with the Riuniti Lambrusco I was drinking while tossing the ingredients together than anything, ha ha!
Steakhouse Chili
2 tablespoons oil
1 lb. beef top round steak, cut into 1/2-inch pieces
1 onion, finely chopped
3 cloves garlic, minced
1 green chile pepper, finely chopped
1 medium green pepper, chopped
1 lb. extra-lean ground beef, cooked and crumbled
1 – 15.5 oz can kidney beans, rinsed
1 – 15.5 oz can pinto beans, rinsed
1 – 14.5 oz can Del Monte Califorinia Diced Tomatoes, undrained
2 cups of beef broth
1 7 oz. can Tomato Puree
2 tablespoons cornstarch
1 tablespoon paprika
2 1/2 teaspoons salt
1/4 teaspoon ground cayenne pepper
Louisiana Hot Sauce
Shredded Cheddar Cheese
HEAT oil in large skillet. Add next 5 ingredients; stir. Cook 10 min. or until meat is evenly browned, stirring frequently. Transfer to slow cooker.
STIR in all remaining ingredients except Hot Sauce and Cheddar Cheese. Cover, cook on low 8 hours. One of my favorite chili recipes to make I picked up at Trader Joe's. It's a pumpkin chili. I know it sounds odd, but it really is so delicious.
I don't have a specific chili recipe I use, but like mine with both meat and beans, lots of fresh onion, and topped with cheese. Everything is better paired with wine!
