Cowboy Caviar French Fries

March Madness means plenty of snacking and here’s an easy way to kick those frozen french fries up a notch while you’re watching the games!

Cowboy Caviar French Fries

Ingredients

Bag frozen crispy french fries, prepared
Cowboy Caviar (recipe below – or you can use a premade salsa from Trader Joe’s or Costco)
Shredded Mexican blend cheese

Cowboy Caviar
1 – 15 oz. can black beans, rinsed and drained
1 – 15 oz. can sweet corn
1 – 7 oz. can chipotle pepper in adobo sauce, dice up the peppers keep the sauce
2 red bell peppers, diced
Juice of 1 lime
1/3 cup cilantro, chopped
2 tbsp red onion, minced
1 tbsp sugar
1 tbsp jalapeño, diced
1 tsp pepper
1 tsp salt
1 tsp cumin

Combine all ingredients in a large bowl and mix well.

Top hot prepared french fries with the salsa and sprinkle with cheddar cheese.

The spiciness of the salsa, if making it from scratch, can be adjusted by removing seeds and/or excluding the jalapeño or reducing the amount of peppers in the recipe.
